Arabic Cuisine and particularly Middle Eastern cuisine use a particular spice mix that we refer to as mixed spices or seven spices.
To prepare 250 grams of mixed spices used in Arabic and Middle Eastern food, at home you will need
- 50 gms allspice
- 25 gms black pepper
- 10 gms cloves
- 35 gms cinnamon
- 15 gms nutmeg (4 nutmeg seeds)
- 15 gms cardamon
- 4 gms Arabic Gum (also known as Meska or Acacia Gum). You can still prepare the seasoning without it.
Ground all these together in a spice/coffee grinder machine and store in airtight glass container.
